François Pralus is one of the 12 best chocolate makers in 2009 and 2010 according to the "club des croqueurs de chocolat" (chocolate crunchers club).

His father, Auguste Pralus, a native of the Loire region, founded the company. He opened his first pastry shop in Roanne in 1948 and in 1955, he was awarded the title of "Meilleur Ouvrier de France" (Best Worker in France), which he owes to his high quality standards, his discipline and his creations, such as the famous Praluline.

The company is now developing through a network of franchisees (in Paris, Annecy, Charlieu, and Renaison).

Pralus owns a Criollo cocoa plantation on an island in the north-west of Madagascar and employs around fifty people.

Pralus is the inventor of the famous Praluline, a gourmet praline brioche.
